Filling Muffin Cups

Generally speaking, fill muffin cups two-thirds to three-quarters full. If you like big muffins, fill the cups higher – just know that the batter will probably spread out over the top of the pan, so butter that, too.

Take a Stand

A stand mixer is a convenient tool when…

• A recipe calls for a large amount of batter
• A batter is sufficiently dense that a hand mixer may get bogged down
• Beating may take more than a couple of minutes, and you want to avoid standing, holding a hand mixer, for a long time.

Snip Those Dates
Looking for an easy way to “chop” whole, pitted dates neatly? Use a sharp pair of kitchen scissors to snip them into thirds. The dates won’t gum up your chopping board, and the pieces remain separate.

Oatmeal: Old Fashioned vs. Quick

Old-fashioned rolled oats are oats that have been partially cooked and flattened. Quick-cooking rolled oats are made the same way but cut into smaller pieces for faster cooking. They can be used interchangeably in baking, but the chewier texture of the old-fashioned variety is preferred.

Catch Those Spills
Fruit pie juices sometimes bubble over. To avoid this mess, slide a sheet or two of foil onto the rack below the one that’s holding the pie, to catch the drip. For greater spill insurance, use a nonstick oven liner. It cleans easily with a damp sponge.

A Vote for Frozen Fruit
In the dead of winter, when you’re craving a reminder of summer, use bagged frozen fruit. Of course, it doesn’t have that just-picked, ripe flavor, but here’s how to fix that. Measure the fruit, let it come to room temperature, then sugar it lightly and let it juice. This will help to bring out the flavor.
