Top O' The Morning to Ye

I have Irish ancestors so of course I celebrate the day! With Corned Beef & Cabbage, for sure!

St. Patrick's Day

Have to celebrate it, it's my birthday!!!!!

Wear green, and "shamrock" jewelry, and eat CUHLCHONON!!!

Five or six potatoes
A quarter head of cabbage, finely sliced
About a half cups worth of chopped onion
One shredded carrot (optional)
4 Tbsp. Butter
Some parsley
Some thyme
A bit of dill--optional

Salt and fresh ground pepper to taste

Peel the potatoes, slice and boil as for mashed potatoes, but mash coarsely and add three Tbsp. butter only, no milk.

In a large frying pan, brown the onions in the remaining butter. Add the cabbage and try to brown it without making it soft (High heat, stir often, like stirfry). Add the shredded carrot if you want a touch of color and a bit of sweet. Remove pan from heat and add the herbs, salt and pepper, and mix with potatoes in a large casserole.

Bake in 400 degree oven for 35 minutes or so. The idea is to get a nice crispy top. You could even sprinkle some bread or cracker crumbs on top.

St Patrick Day

Since there is no Celtic Day, I celebrate St Patricks. I was also taught by Irish nuns for 10 years of my schooling.

Irish Music

I play fiddle with my local Irish center, so of course we celebrate with a huge festival, parade and tons of food and music.

4 leaf shamrocks

How is it so many people get shamrocks confused with 4 leaf clovers?

Hoppers

We went over to Hoppers in Midvale for the traditional corned beef and cabbage. They do this every year and do it well.

This is weird....

I do not celebrate it, or even consider myself Irish. But my grandad was a Shannon, and last weekend I got a craving for corned beef hash. Instead of buying cans, we experimented with a beef roast. Turned out wonderful. I have high Blood pressure, so had to go easy on the salt.

I've got the bagpipes playing on the CD player, making rye bread, corned beef and cabbage and mint chocolate chip milkshakes for dessert!

In our house we celebrate all year round because of our Irish heritage. We don't save the corned beef, colcannon, or soda bread for just one day a year !!

I play Irish music starting about a week before..the day before St. Patrick's I spend the day in the kitchen cooking brisket and cabbage dinner, Irish Stout Stew, and Soda Bread...I do this every year..

Our family tradition on St Patrick's Day is the whole corned beef and cabbage meal,the more the merrier! My kids are Irish from both sides he's grandma was an O'Keefe and I'm an O'Brien and yes I drink my tea from a Bunratty Castle mug. the seat of King Brian!I pray that I might visit there someday!

Irish Food

I have a corned beef brisket in the freezer, and cabbage in the fridge, so imagine we will have a good meal in celebration. I am not full Irish, but I am still filled with the spirit!!!

I pinch!

My grandfather was Vanza O'Hara Leonard so this is a big holiday for me. If co-workers don't wear green I pinch them! My mom got me started with that many years ago. And I'll try cooking something new from my Irish cookbook.

corned beef

Where I came from pressed corned beef was readily available in deli. convenient--what I made recently very good. My son-in-law always made traditional boiled dinner.

I get in the spirit. Nothing fancy--green milk, green shirts, and thoughts of the green, glorious days of spring! I hope we have a lovely spring weekend for the Vernal Equinox!
