beets anyone??? or maybe collards and kale???

Quick one this time. How do I tell if my beets are fully mature. I picked a few, but am not sure how long I can wait for the rest.

Also do collards and kale bolt? I have a bunch growing since the beginning of summer and was hoping to leave them growing into the winter.
