Blue Cheese Coleslaw

This is one of my hubby's favorite cold Summer sides.

BLUE CHEESE COLESLAW
---------------------

3 Tablespoons apple cider vinegar
2 Tablespoons finely chopped Onion
1 Tablespoon sugar
3/4 tsp celery seed
1/4 tsp salt
1/8 tsp dry mustard
1/4 tsp pepper
1 clove garlic, minced
1/4 cup vegitable oil
1 lb cabbage, finely shredded (I use store bag of slaw mix)
1 (4oz) container of crumbled blue cheese

* Combine first 8 ingredients in a small bowl,add oil in a slow steady stream, stirring constantly with a wisk until well blended. Cover and chill atleast 1 hour.

* Combine cabbage and blue cheese, cover and chill 1 hour.

* Drizzle vinegar mixture over cabbage mixture, toss until well coated and serve.

Good Variation

As I've been stuck on sweet-sour coleslaw, and still have another cabbage to go!
