I looked through Almanac's list of salads, doesn't have this one, which is fantastic.
11 ounces of large peeled and de-veined cooked shrimp
2/3 cup of finely chopped celery
2/3 of large carrot, shredded
1/3 cup of choppen onion
1-2 hard cooked eggs, chopped
1/2 mayonnaise
salt and pepper to taste
In a large bowl, gently toss the shrimp, celery, carrot, onion, eggs, and mayonnaise. Salt/pepper to taste. Chill until ready to serve...this is for 4 servings, if more needed, double recipe.

That DOES sound delicious Betty!
Just in the rare case of shrimp leftovers, try a simple salad of baby spinach topped with crumbed yellow egg only, and diced shrimp. I recommend Poppy Seed Dressing.
