Help. I've lost my recipe(again)

Can any of you excellent wise people help me. Somewhere in my recipe filing system(an old box full of bits of paper with recipes on) I have got a recipe for 'stem ginger curd'. It's a bit like lemon curd but with ground up stem ginger added. It is great, I used to make it years ago and thought I would have a go at making some. Please help.
And before someone suggests I put them on my computer, paper came before computers.

Sussexman, no wonder you were craving this!

Every once in awhile I treat myself to the grand expenditure of a jar of Imported Ginger Jam ... and plenty of english muffins.

I like Lemon Curd, so I can just imagine (translate to "salivate") this recipe.
