Personally? I sauté onions in butter (oil DOSENT work for me) add beef broth and add wine and a little extra beef via bullion and call it done
Melt butter with olive oil and cook on medium heat and then add beef broth, sherry and thyme. Heat the broiler ladle soup into oven safe serving Bowls and place some slice of bread each one if you want.
