i just made some roasted tomatoes and o..m..g! they're sooo delicious!!! I sliced several tomatoes (fresh from the garden) onto a baking tray and cut a few onions into chunks, about three garlic cloves smashed and pulled apart and tossed over the tomatoes. A couple of sprigs of oregano and basil from my kitchen garden. Then I drizzled olive oil and coarse salt over the top and roasted in a 425 degree oven for about 15 minutes. Then I tossed it around and roasted another 15 minutes.
