I have been making a similarI have been making a similar version of this and also call it a fritata, of sorts. I use 1/2 C. onion, 1/4 C. red yellow or orange bell peppers and 1/2 of a hot pepper. To this I add either 1/2 c broccoli florets or 6-7 spears of asparagus and 1/2 cup of spinach. Simmer covered on a real low heat while I do my outside chores. Whip up 2 eggs with about 2 tbls. of lemon juice pour over vegies and add any kind of cheese that I have around. 2 servings top with some Greek yogurt and serve. Can also add some precooked brown rice to vegies towards the end of cooking.
