For greens, harvest when theyFor greens, harvest when they are 5 to 6 inches tall (now!). For the roots, harvest when they are 1-1/2 to 2 inches in diameter. This is usually 40 to 50 days in. They are most tender then. As they get bigger, they get more fibrous. Leave about 1 inch of foliage on the root when you harvest.
