Before you harvest the seeds,Before you harvest the seeds, the sunflower head must be completely dry. If you leave the heads on the plants to dry you risk loosing some to birds and other critters. You can cut the heads off and dry them indoors or in a protected area. The time it takes to dry depends on how mature the seeds are and what the conditions are in the area where you dry the seeds.
