Essentially, root cellars were the first refrigerators. They have the ability to keep their contents 40 degrees cooler than outside temperatures during the heat of summer. This also works in reverse in winter, when root cellar temperatures are kept slightly above freezing. Our page here on Almanac.com serves as a guideline.
