You can buy organic potatoesYou can buy organic potatoes (or any from a store) and as long as they form eyes they will grow. Most non-organic store bought ones have a process dont to keep them from forming eyes and sprouting. Keep them in a cool dry place and once they start to form eyes, cut into small sections leaving 2 eyes on each piece. I set mine for 24 hrs after cutting (on a rack) at room temp to allow them to form a skin. Then transplant to the growing box or garden.
