Fresh ginger and apples combine in this unusual jam, which is fabulous on toast, pound cake, or as a glaze for chicken or pork. Size: 8oz.

McIntosh Farm Apple Pancake Recipe

2 large McIntosh apples
6 tablespoons unsalted butter
1/4 cup McIntosh Farm Apple Pie Jam
        or McIntosh Farm Apple Ginger Jam
2 tablespoons sugar
3 eggs
3/4 cup milk
3/4 cup all-purpose flour
1/4 teaspoon ground nutmeg

Peel, core and thinly slice the apples. Melt 2 tablespoons of the butter in a large, heavy skillet. Add the apple slices and the jam, sprinkle with sugar and toss over medium-low heat until the apples are tender and the juices have thickened, about 5 minutes. Cover and keep warm. Heat oven to 425 degrees. Place 4 tablespoons of butter in shallow 2-quart baking dish or pie plate. Put dish in the oven until butter melts. Combine eggs, milk, flour, and nutmeg in food processor or with electric mixer until smooth. Spoon the apples into the dish, pour batter over the apples. Bake in center of oven until golden and puffed, about 15-20 minutes. Serve warm with real New England maple syrup.

This is one of the best jams I've ever tasted. I love different jams from all over the globe and finding this so close to home was a great find. I almost forgot I had it and when I finally tried it I was looking for more. I was wondering what I wanted for dessert so I opted to make toast and threw this on it and what a pleasant surprise it was so I made some for a friend and who needs to buy a cake when this jam blows it out of the ball park. Thank you to the person who created this recipe!!! I will be back for more and for as long as you keep producing this Gem of a Jam!!!
