Preheat oven to 350 degrees.
Season chicken with salt and pepper. Toss with 2 tablespoons Virgin Coconut Oil and brown on both sides in a wide oven safe fry pan or oven safe skillet over high heat.
Remove from heat. If skillet is oven safe, add remaining virgin coconut oil, thyme, and garlic. Otherwise, transfer chicken to oven-safe baking dish before adding remaining coconut oil, thyme, and garlic. Deglaze skillet and add to baking dish.
Cover and bake for 1-½ hours.
Remove chicken from oven. Rest for 5 to 10 minutes. Carve and serve.
