Adirondack Flapjacks Recipe

These tasty, tender pancakes will be about 1/4 inch thick when cooked. Serve well buttered with warm maple syrup or, for a change, with shaved maple sugar or whipped cream. For further variation serve rolled around sausage links. —Mirror Lake Inn, Lake Placid, New York

Yield: Serves 4.

  • 4 egg yolks, beaten
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 cups milk
  • 6 tablespoons butter, melted
  • 2 cups flour
  • 2 teaspoons baking powder
  • 4 egg whites, beaten until stiff

Beat together the egg yolks, sugar, salt, milk, melted butter, flour, and baking powder. Fold in the egg whites. Heat and grease a griddle and cook the flapjacks until bubbles appear. Flip and cook the other side.
