A classic Filipino dish adapted to Alaskan taste. Unique spicy flavor.
Yield: serves 4
- All ingredients are approximations:
- 1-2 pounds chicken
- 1 cup soy sauce
- 1 cup vinegar [white or cider]
- 3/4 cup sugar or to taste
- 1/3 cup pickling spice
Wrap pickling spice in cheesecloth or a screen type tea ball can be used.
Mix liquids and sugar in an appropriate sized pot until sugar is dissolved.
Bring to a boil. Add chicken and spice ball, cover and turn down heat to low/medium and simmer for about 40 minutes or until tender.
Serve with rice.

Our family loves adobo. My filipino father in law makes it with a similar recipe that also has a clove of garlic in it. When it's finished cooking we remove the spice ball and chicken and add cornstarch to make a gravy to pour over your rice :)
