Almond Mandelbread Recipe

These sliced nut cookies are sometimes called "Jewish biscotti."

Yield: about 50 to 60 slices

  • 9 tablespoons butter
  • 1-1/4 cups sugar
  • 3 eggs
  • 3/4 teaspoon vanilla extract
  • 1-1/2 teaspoons almond extract
  • 3 cups all-purpose flour
  • 3/4 teaspoon salt
  • 2-1/4 teaspoons baking powder
  • 1 cup chopped almonds
  • 3 tablespoons cinnamon sugar
  • Garnish (optional): 12-ounce bag chocolate morsels, melted

Preheat oven to 375 degrees F. Mix butter at medium speed until smooth. Slowly add sugar; continue to mix until light and creamy. Add remaining ingredients, except cinnamon sugar; mix well. Pour out dough onto floured countertop. Form into three 1-inch-high loaves; transfer onto parchment-lined pans. Dust with cinnamon sugar and bake approximately 20 minutes, until lightly browned. Turn oven down to 350 degrees F. When cool, cut into 1-inch slices. Lay slices on their sides and toast lightly, about 5 to 10 minutes. If desired, dip ends of cooled slices in melted chocolate. Let harden on parchment paper.
