Apple Pudding Recipe

Yield: Makes 4 servings.

  • 2 'Cortland' or 'McIntosh' apples
  • 1/4 cup uncooked rolled oats
  • 1/2 cup apple juice
  • 1/3 cup water
  • 1/2 cup brown rice, cooked
  • 1/4 teaspoon cinnamon
  • 1 tablespoon pure maple syrup
  • dash of allspice
  • topping, such as toasted nuts, cream, ice cream, or yogurt

Peel, core, and slice apples. Lightly toast oats by stirring in a saucepan over medium heat. Mix all ingredients except topping in a saucepan and bring to a boil; then cover and simmer for 20 minutes. Let cool; then blend to desired consistency. Add topping.
