Apple Rice Breakfast Pudding

Yield: Serves 4

  • 1 cup cooked rice
  • 1 cup dark brown sugar
  • 3 tablespoons margarine
  • 1 cup unsweetened applesauce
  • 1/3 cup water
  • 1 teaspoon vanilla extract
  • 1-1/4 tablespoons flour
  • light cream

Preheat oven to 375 degrees F. Combine all the ingredients except the cream. Pour into a shallow pan and bake 20 to 30 minutes. Serve warm with the cream.
