Aunt Amy's Baked Cranberry Pudding Recipe

Far easier than a traditional steamed pudding, this quick dessert is sure to become a family favorite.

Yield: 6 to 8 servings

  • 2 cups flour
  • 1 cup sugar
  • 2-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons melted butter
  • 2/3 cup milk
  • 1 egg
  • 1-1/2 cups finely chopped cranberries
  • Hot Butter Sauce (optional)

Sift the dry ingredients. Add butter, milk, and egg, and beat for 2 minutes. Stir in the cranberries. Pour mixture into a greased 8-inch square baking pan. Bake at 350 degrees F for 45 minutes or until set in the middle.
