Yield: 6 servings
- 1 cup split peas
- 2 cups water
- 1 onion
- 1/2 small sweet pepper
- 2 cans (11-1/2 ounce) chicken broth
- 1 pound mild chourico
- 1 can (11-1/2 ounce) plain tomato sauce
- 3 carrots
- 3 potatoes
- 1/2 pound spaghetti
- 1 tablespoon white vinegar
Chop fine the onion and sweet pepper. Cut carrots, potatoes, and chourico into bite-sized pieces. Cook split peas in water over low heat for 20-30 minutes. Add chicken broth, onion, sweet pepper, tomato sauce and chourico. Cook for one hour over medium heat until peas are soft. Add carrots, potatoes, and spaghetti and cook for 15-20 minutes until carrots and potatoes are cooked but still firm. Turn off heat and add vinegar.
