Use this on a chef’s salad for an elegant taste and color combination.
1 large ripe avocado
1/2 teaspoon salt
1 teaspoon lemon juice
2 tablespoons tomato sauce
2 tablespoons chopped sweet red onion
1/4 teaspoon Tabasco sauce
2 tablespoons chopped fresh parsley
2 tablespoons salad oil
1 tablespoon cider vinegar
Peel the avocado, remove pit and chop the meat into small pieces. Add the other ingredients, folding together to mix thoroughly.
Makes enough for 8 individual chef's salads.
