Use this on a chef's salad for an elegant taste and color combination.
Yield: Makes enough for 8 individual chef's salads.
- 1 large ripe avocado
- 1/2 teaspoon salt
- 1 teaspoon lemon juice
- 2 tablespoons tomato sauce
- 2 tablespoons chopped sweet red onion
- 1/4 teaspoon Tabasco sauce
- 2 tablespoons chopped fresh parsley
- 2 tablespoons salad oil
- 1 tablespoon cider vinegar
Peel the avocado, remove pit and chop the meat into small pieces. Add the other ingredients, folding together to mix thoroughly.
