Yield: Makes 8 servings.
- 2 pounds any combination of ground beef, pork, or lamb
- 2 onions, chopped
- 1 pound canned tomatoes
- 1-1/2 tablespoons sugar
- 2 tablespoons curry
- 2 tablespoons vinegar
- salt
- 2 firm bananas, peeled and sliced
- 1 apple, peeled, cored, and chopped
- 2 tablespoons apricot jam or 1 can apricots
- 1/4 cup slivered almonds
- 1 cup tomato juice, for thinning
Brown meat, drain off fat, saute onion, then combine all ingredients and simmer for a half hour. Thin with tomato juice, as needed, and serve over rice. Can be made in a crock pot.
