Baked Apple Pancake

This is excellent for special breakfasts or brunch, although it has become an everyday favorite in my house!


2-4 servings


3 eggs
1/2 cup flour
1/4 teaspoon salt
1/2 cup milk
3 tablespoons margarine or butter
3-4 apples, sliced
1/4 cup brown sugar
1 tablespoon cinnamon


Beat eggs with fork, add flour, salt, and milk and mix (batter will be lumpy). Melt margarine in cast iron fry pan over medium heat until melted and bubbly. Turn off heat, add batter to pan. Place sliced apples on top evenly. Sprinkle brown sugar and cinnamon. Put in 425 degree oven for 25 minutes. Enjoy! You can add maple syrup when served if you wish.
