Baked Mackerel

Yield: Serves 4

  • 2 small mackerel
  • 1 cup milk
  • salt and pepper
  • chopped chives
  • paprika
  • melted butter

Split and bone mackerel. Place skin down in a greased pan. Pour over the mackerel milk seasoned with salt and pepper. Bake uncovered in a moderate (375 degrees F) oven for 25 minutes. Sprinkle with chopped chives and paprika. Serve with melted butter.
