Yield: Serves 4
- a 2-3 pound rabbit, cut in serving pieces
- 6 tablespoons butter
- 1-1/2 cups finely rolled salt crackers
- 1 teaspoon salt
- pepper
- chopped parsley
Preheat oven to 350 degrees F. Dip pieces of rabbit in melted butter, then roll in cracker crumbs to which seasonings have been added. Place pieces in a shallow baking pan, but do not crowd. Cover the pan with a lid or with aluminum foil. Bake for 1 hour or until tender.
