The Parmesan makes this unusually tasty.
Yield: Serves 4.
- 1 cup uncooked, long-grain rice
- 4 tablespoons butter or margarine
- 2 cloves garlic, minced
- 2 cups hot beef or chicken broth
- 1/2 teaspoon salt
- 1/4 cup freshly grated Parmesan cheese
Saute the garlic and rice in the butter or margarine until golden. Pour into a casserole, add the broth and salt. Cover tightly and bake in a 350 degrees F oven for 25 minutes or until the liquid is absorbed. Add the cheese and stir until cheese is well mixed and the rice is fluffy.

This is delicious! But I
This is delicious! But I like to add some chopped sweet onions and a bit of broken up vermicelli to saute in a bit less butter prior to adding the rice (I use half unsalted and half salted butter). I use 1 clove of garlic. It's a great recipe for company since you can get the casserole ready, then pop it in the oven when your guests arrive. We love it.
