I've used this recipe for 40 years and always get rave reviews because it is so moist and delicious.
Yield: One 9x5x2.5" loaf pan or two 7-3/8x3-5/8x2-1/4 (bake less time)
Preparation Time: 15 minutes
Start to Finish Time: 75 minutes
- 1/2 cup vegetable cooking oil
- 1 cup sugar
- 2 eggs, beaten
- 3 ripe bananas, mashed
- 1/2 teaspoon vanilla
- 1/2 cup chopped walnuts
- 2 cups sifted flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons milk
Beat oil and sugar together. Add eggs and banana pulp and beat well. Add sifted dry ingredients, milk and vanilla. Mix well and stir in nuts. Pour into greased and floured loaf pan. Bake in preheated moderate oven (350 degrees) for about 1 hour. Cool well and store overnight in plastic bag in refrigerator before cutting.
