In Colonial New England, it was said that a woman who made this cake could find herself a man, thus the epithet. Serve warm or cold, for dessert or breakfast. Try it with fresh cream.
Yield: one 9x13-inch pan
- 2 cups flour
- 1-1/2 cups sugar [you can use as little as 1]
- 2 teaspoons baking powder
- pinch of salt
- 2/3 cup vegetable oil
- 1 cup milk
- 2 eggs
- 2 to 3 cups blueberries, fresh or frozen
- 1 cup (or less) sugar [you can use as little as 2 or 3 tablespoons]
- 1 teaspoon cinnamon
Preheat oven to 350 degrees F. In a medium bowl mix the first 7 ingredients with an electric mixer for 3 minutes. Pour the mixture into a greased and floured 9x13-inch baking pan. Arrange the blueberries on top, then mix together the sugar and cinnamon and sprinkle evenly over the batter. Bake 50 minutes.
