Blueberry Cake Cups For Two

Recipe for two people, easy and good for you. Good for breakfast, snack or dessert.

Yield: 2 servings

  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • dash salt
  • 1/4 teaspoon cinnamon (optional)
  • 1/4 cup sugar
  • 1/4 cup milk
  • 1 tablespoon melted oleo
  • 1 teaspoon vanilla extract (optional)
  • 1 cup blueberries, divided (fresh or frozen)

Mix flour, baking powder, salt, and cinnamon in a bowl. Mix sugar, milk, oleo, and vanilla extract in a separate bowl. Add dry mixture to wet mixture and stir until just blended.

Grease two ovenproof coffee mugs or ramekins and fill with 1/2 cup berries. Cover with batter, then top with remaining 1/2 cup of berries.

Bake at 375 degrees for 30 minutes, or until brown on top. Serve warm.
