Although it is not steamed and has no raisins, this is the brown bread Sam Thacher's mother served with the family's Saturday night beans.

Yield: 2 loaves.

  • 2 teaspoons baking soda
  • 1-1/2 cups white flour
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 cup molasses
  • 3 cups sour milk
  • 2 teaspoons salt
  • 3-1/2 to 4 cups graham flour

Sift baking soda with white flour. Combine with remaining ingredients. Form into 2 large loaves. Bake in greased loaf pans at 350 degrees F for 1 hour or until done.
