Yield: 4 small or 1 large tart
- 1-1/2 cups cake flour
- 1/2 cup butter, softened
- 5 tablespoons sugar
- 1 egg
- 1 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1 cup brown sugar
- 4 tablespoons flour
- 4 cups peeled and sliced apples
Mix first four ingredients together. Add a little water if necessary to form a dough. Chill for 2 hours before use. After chilling, roll out to 1/16 inch and press into well-greased 10-inch tart pan. Set aside any extra pastry for later use. Mix the remaining dry ingredients well. Add apples, mix well, and spoon into pastry-lined tart pans. With any remaining pastry, cut out shapes and layer over tarts. Sprinkle with a little more cinnamon and brown sugar if desired. Bake at 350 degrees until light brown, about 40 to 45 minutes.
