Mix dry milk,sugar (or splenda), & cornstarch in microwave bowl.
Add the 3 ½ cups of HOT water and mix well. Beat the 2 eggs thoroughly with the ½ cup cool water and add to the bowl with other ingredients.
Microwave for 1 minute and mix, keep doing this for about 3 minutes then add ¾ cup of the toasted coconut and microwave until pudding thick.
Remove from Microwave carefully-it is very hot! Add vanilla & butter and mix.
Sprinkle about 1 Tablespoon toasted coconut in bottom of crust and pour hot mixture into crust.
When cooled….top with whipped topping or cool whip and sprinkle remainer of toasted coconut on top. Enjoy!!
