Yield: 8 servings
Cake
- 2 cups flour
- 2 cups sugar
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 2 teaspoons soda
- 1-1/2 cups oil
- 4 eggs
- 1/2 cup chopped nuts (optional)
- 3 cups grated carrot
In a large bowl, mix together first five ingredients. In a separate bowl mix oil, eggs, nuts, and carrot. Add wet mixture to dry mixture and stir until moistened.
Frosting
- 8-ounce package cream cheese
- 1/4 cup butter
- 2 teaspoons vanilla
- 3/4 cup powdered sugar
Combine ingredients in a bowl and mix well.
Bake cake at 350 degrees for 45 minutes. Let cool, then frost.
