Recommended for turkey, chicken, or goose, the recipe makes sufficient to stuff a 15-18 pound bird.
- 1 pound chestnuts, coarsely chopped
- 1/4 pound salt pork
- 1 onion, chopped
- 2 stalks celery, minced
- 2 tablespoons chopped parsley
- 1 teaspoon poultry seasoning
- 6 cups breadcrumbs
- 1/2 cup melted butter
- 2 eggs, beaten
Cook pork in frying pan until brown. Add onions and celery and simmer for 5 minutes. Pour over the rest of the ingredients. Mix well, and stuff lightly into the bird.
