They have the added advantage of being very nourishing.
Yield: Makes 3 dozen.
- 1-1/4 cups sifted all-purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 cup soft butter or margarine
- 1 cup molasses
- 2 eggs, beaten
- 1-1/2 cups rolled oats
- 1 cup golden raisins
- 1 cup chopped pecans
- 1 6-ounce package semi-sweet chocolate bits (optional)
Sift the flour, baking soda, baking powder, salt and spices together into a mixing bowl. Add the remaining ingredients. Beat at low speed of the electric mixer or by hand until well blended.
Use 2 teaspoons dough for each cookie; place well apart on ungreased cookie sheets and bake at 350 degrees F for 10 to 12 minutes.
