I made this recipe for my husband . . . he loves the flavor and the color.
Yield: 2 to 4 servings
- 1 bottle soy sauce
- 4 boneless, skinless chicken breasts, cut in small pieces
- 1 fresh piece ginger
- 1 each red, green, yellow and orange pepper, sliced and seeded
- 1 bag slivered almonds
- 1 box Minute rice
Put a little soy sauce in pan, add chicken and 1/2 of the cut up ginger, cook until completely white, stirring all the while...this will take about 15 minutes. While the chicken is cooking make the Minute Rice and let it sit ... after the chicken is done add peppers without ... cook for about 10 minutes then add slivered almonds..
Serve on rice. Enjoy.
