Chives give potatoes a tangy flavor. Keep a pot of them growing in your kitchen all during the winter months.
Yield: Serves 6-8.
- 8 large all-purpose potatoes
- 1/2 cup hot milk
- 4 tablespoons butter
- 4 tablespoons finely chopped fresh chives
- Salt and white pepper
Peel and quarter potatoes. Boil in salted water to cover until tender. Drain, return to pan, add hot milk, butter, chives, and salt and pepper to taste. Mash thoroughly and whip lightly with a fork.
