Chutney Puffs

Cheese, curry, bacon, and mango chutney create a unique combination of flavors. Serve as an open face sandwich or as a fancy canape.


Makes 12.


1/2 pound cheddar cheese, grated
1/2 teaspoon baking powder
1/4 teaspoon curry powder
2 egg yolks
2 egg whites, beaten stiff
8 strips bacon, fried crisp and crumbled
4 tablespoons hot mango chutney
12 slices of firm white bread, crusts removed, lightly toast


Combine cheese, baking powder, curry, and egg yolks. Fold in egg whites. Combine bacon and chutney in separate bowl. Spread cheese mixture thickly on slices of bread and spoon bacon-chutney mixture in center of each slice. Broil about 4 inches from heat until cheese mixture puffs. Serve hot.
