This is as easy to make as sloppy joes, but much more of a treat.

Yield: Enough for 6-18 English muffin halves.

  • 1 pound lean ground beef
  • Butter or margarine
  • 2 tablespoons flour
  • 1-1/4 cups consomme or beef bouillon, or 1 can (10-1/2 ounces)
  • Salt and pepper to taste
  • Mayonnaise
  • Chopped sweet onion

Brown beef in enough butter or margarine to keep it from sticking. Chop up while cooking to make it crumbly. Add flour and cook a few minutes before adding consomme or bouillon. Stir well and simmer for about 30 minutes. Mixture should be moist, but not runny. Serve hot on split, toasted English muffin halves, and topped with a generous dollop of a mixture of mayonnaise and chopped onion.
