Coconut Bread

From Cooking with Coconut Flour. A regular loaf, able to be used for sandwiches – though it says the texture and appearance are different.

Ingredients

6 eggs
1/2 cup butter, melted
2 tablespoons honey
1/2 teaspoon salt
3/4 cup sifted coconut flour
1 teaspoon baking powder

Instructions

Blend together eggs, butter, honey and salt. Combine coconut flour with baking powder and whisk thoroughly into batter until there are no lumps. Pour into greased loaf pan and bake at 350 degrees for 40 min. Cool on rack. Makes one small loaf.

I'M A LICENSED BAKER AND I THINK THAT THERE IS SOMETHING WRONG WITH THIS RECIPE. THERE DOESN'T SEEM TO BE ENOUGH FLOUR, COMPARED TO THE REST OF THE INGREDIENTS. I HAVE NEVER USED COCONUT FLOUR BEFORE, BUT IT JUST DOESN'T SEEM TO BE ENOUGH FLOUR, PLEASE LET ME KNOW IF I AM WRONG AND ALSO PLEASE KEEP UP THE GREAT RECIPES, I THINK THEY ARE GREAT.

Baking with coconut flour is a whole new ball game. It is quite dense and very absorptive, so a little goes a long way even with a greater yield of liquid ingredients. The bread will have a different texture, but it is well worth a try!
