Comfort Food - Gingerbread

1/2 cup corn oil
1/4 cup light-brown sugar
2 cups white flour
1 cup whole-wheat flour
1/2 cup milk
2 eggs
1/2 cup dark molasses
2 teaspoons powdered ginger


Preheat oven to 350 degrees F. Grease a 9x9-inch pan. Combine oil and sugar, then sift flours together and add to sugar mixture. Add milk, eggs, and molasses. Stir, then add ginger. Bake for 30 minutes. Serve warm with applesauce or dusted with confectioners’ sugar.
