Confetti Coleslaw

3 cups shredded green cabbage
1 cup shredded red cabbage
1/2 cup peeled, cored, and diced apple
1/2 cup grated carrot
1/2 cup chopped red onion
1/2 cup grated, peeled parsnip
1/2 cup chopped green bell pepper
1/2 cup plain yogurt
3/4 cup mayonnaise
1 tablespoon honey
3 tablespoon lemon juice
1/4 cup heavy cream
1/2 teaspoon mustard seeds
1/4 cup chopped peanuts


In a large bowl, combine the green and red cabbage, apple, carrot, onion, parsnip, and bell pepper. Whisk together the yogurt, mayonnaise, honey, lemon juice, cream, and mustard seeds. Fold into the slaw mixture. Toss well to mix. Refrigerate for at least one hour. Sprinkle the slaw with the chopped peanuts and serve immediately.
