Superb with chili, Portuguese stews, or chowders.
Yield: Makes approximately 12 pieces
- 1 cup cornmeal
- 1 cup flour
- 3 teaspoons baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 egg, beaten
- 1-1/2 cups milk
- 4 tablespoons melted butter
Preheat oven to 425 degrees. Sift together cornmeal, flour, baking powder, sugar, and salt. Add egg, milk, and butter and beat until well mixed. Pour into greased 8-inch skillet or 8-inch-square pan. Bake 25 minutes. Cool and cut into squares.
