Corn Bread with Red Clover Blossoms Recipe

Red clover leaves have long been associated with luck, happiness, and prosperity, a belief that originated with the ancient Druids.

Yield: Serves 6.

  • 1 cup cornmeal
  • 1 cup unbleached flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 egg
  • 1 cup yogurt
  • 3 tablespoons honey
  • 3 tablespoons extra-virgin olive oil
  • 1 cup finely chopped fresh clover blossoms

Preheat oven to 350 degrees F. Butter an 8-inch square baking pan. Combine cornmeal, flour, baking powder, baking soda, and salt in a mixing bowl. Beat the egg lightly, and add the yogurt, honey, and olive oil. Add the wet mixture to the dry ingredients, stirring just until thoroughly mixed. Fold in the clover blossoms. Spread into the baking pan. Bake for 20 minutes, or until the top is golden and the center is firm to the touch.
