- 4 cups yellow cornmeal
- Boiling water
- 2 cups pork cracklings
- 2 teaspoons salt
Pour enough boiling water over cornmeal to moisten it well. Add salt. Set mixture aside to cool. When cool enough to handle mix in pork cracklings. Shape into cakes. Bake in moderate oven for 25-30 minutes in well-buttered baking pan.
