Cranberry Apple Bread

Worthy of slicing thick and serving as dessert, topped with a sauce. --The Kennebunk Inn, Kennebunk, Maine

Yield: Makes 2 medium loaves

  • 1/2 cup butter
  • 2 cups sugar
  • 2 eggs
  • 2 cups chopped cranberries
  • 1 cup applesauce
  • 1 cup chopped walnuts
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 3-1/2 cups flour
  • 1 teaspoon baking powder
  • 3-1/2 teaspoons baking soda

Cream butter, sugar, and eggs. Add cranberries, applesauce, nuts, and spices, and blend well. Sift together flour, baking powder, and soda, and stir into mixture. Pour into 2 greased and floured medium-sized loaf pans and bake 1 hour at 325 degrees F or until loaves test done.
