Cranberry Bread Recipe

A moist, dense loaf that can be served with breakfast, lunch, or dinner or as a snack any time of day. -- The Jefferson Inn, Jefferson, New Hampshire

Yield: Makes 1 loaf.

  • 1 cup sugar
  • 2 tablespoons butter, softened
  • 1 egg
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped fresh cranberries
  • 3/4 cup orange juice
  • 1/2 cup chopped walnuts

Cream the sugar and butter until smooth. Beat in the egg. Add the flour, baking soda, baking powder, salt, cranberries, orange juice, and nuts, and blend well.

Pour into a greased 9x5-inch loaf pan and bake in a preheated 350 degree oven until a toothpick inserted in the center comes out clean, about 50 minutes.
