Cranberry Cheese Bread Recipe

The cheese and cranberry combination creates an unusually delicious flavor that is difficult to identify. Serve with lunch or dinner. --Stafford's in the Field, Chocorua, New Hampshire

Yield: Makes 1 large loaf

  • 2 cups flour
  • 1 cup sugar
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons grated orange rind
  • 2 tablespoons shortening
  • 1-1/2 cups shredded cheddar cheese
  • 1 egg, beaten
  • 1 cup cranberries, halved
  • 1/2 cup chopped walnuts
  • Juice of 1 orange, plus water to make 3/4 cup

Combine first 5 ingredients, then cut in shortening. Mix remaining ingredients together and combine with dry mixture. Turn into greased 9x5-inch loaf pan and bake at 350 degrees F for 1 hour. Let cool before slicing.
